I got a 5.0 ch ac3 from dvd2avi with a 24 ms delay. I want to keep the 5.0 channels so if I want to keep it as a 6-channel/48hz/16-bit wav, do I set the delay to 0?

Basically, I'm going to use the KDVD-720x480-Full-D1-_NTSC template, process through SpruceUp, and dump it unto a DVD+R/RW.

Can't you mux the ac3 & m2v using bbmpeg? I've done this about 8 times successfully now. The resulting mpg is usable asis in DVD Workstation without any re-encoding.
