But do you think that the overall file size is too large? I didn't think it was possible to go over 795 megs on an 80 minutes disc.

Looks big to me...

I completed the whole process in DVD2SVCD. The first muxed mpeg file is 789 and the other is 815...I'm using 80 minutes CD-RW's so this doesn't seem right to me...do I have to re-do these files? ...

Yup, I figured out pretty quick that I had to capture at a lower resolution. The last thing I tried, was 640x480x30 FPS and ended up with 887megs of .wmv after 8 hours of encoding...
