With compaact! you can easily convert your audio files, either mono, stereo or surround, into the future's audio format MPEG-4 AAC.

IMO, the two best (quality wise) AAC encoders at the moment are the newest NERO and QuickTime encoders. I prefer NERO encoder because of its batch capabilities and VBR already implemented. Unfortunately they are both not free.
Although compaact! looks very promising!
