Also......should I worry about bitrates when I do this? I would say each match has an average of 10-30 min or so..

Makes perfect sense.

All you have to do is follow the extraction guides:

Extract Video from a Professional DVD: http://www.digitalfaq.com/guides/video/edit-dvd.htm
or Edit DVD from DVD Recorder (or most other homemade DVDs): http://www.digitalfaq.com/guides/vid...d-recorder.htm

Then take those assets and author into a new disc.
