Is there a guide that gives definitions of all of the metadata fields that might be found in video files? I'm especially interested in the meaning of encoded and tagged date, their relationship to created and last modified dates and any other date fields. But I would also like to understand the rest of the metadata as well.

I don't remember which one, but this was in the long manual that came with some professional software. Perhaps Sorenson Squeeze? It's been about 3 years since I saw it. Thankfully, when I did streaming work for studios, somebody else took care of the metadata aspect. The metadata was injected after the encoding, and it was something that I had little interest in learning. I still don't, to be honest.

Any pro software with a metadata option likely has a guide in the user manual, either printed or PDF.
