For Windows:
A program called HDVSplit will pull the footage off of the camcorder as MPEG-2 transport streams.

The preview function is generally broken, so leave it disabled.

For Mac:
FCPX should be able to capture HDV directly to a ProRes or Apple Intermediate compressed video. Apple used to provide a developer tool called "DVHSCap" to capture the raw transport streams like the Windows tools above. I don't know if it works with recent releases of MacOS X though. There is a newer application called "AVCVideoCap" that will likely work on newer versions of OS X available here:
