Step 1 from above is YUY2.

Step 2 - if you deinterlace in Avisynh with QTGMC, it's in YV12. If you deinterlace in Virtualdub it's RGB. You'll get cleaner and sharper results with QTGMC.

Step 3 - if you crop and make new borders in Avisynth, you'll get smaller borders and the core image remains intact. You can crop/add borders in YV12, YUY2, or RGB in Avisynth. If you mask in VirtualDub it's in RGB -- you get thicker borders, and you lose sight of about 10% of the original image.

Step 4 - if encoding to MPEG/h264/h265/Xvid, etc., it's encoded as YV12.
