Yeah, you're just viewing your lossless captures without double-frame-rate deinterlacing and comparing that to (probably) hardware deinterlacing by your player. It's recognizing the DV as interlaced...

The TBC in the camera is active on both firewire and analog outputs. It doesn't do any deinterlacing, maybe the "smoothness" was the player automatically deinterlacing the captured DV file?
