Try a little test yourself. Encode a same clip at 35-35, and do the same at 100-100. Which has more blocks? 100-100.
Now select 0-0 and do the clip again.
The one with less blocks is...

But I suggest you keep the audio at Dual-Channel, if you plan on using Dolby Surround sound. It's much better that stereo, because of the independent channel separation. Also...
