test a small sample on a clip with winsubmuxer first.
if you were doing svcd's and your player supported subs,,,then u could turn them on and off....they wouldnt be permanent, no....

have u tried something like WinsubMuxer to add...
have u tried something like WinsubMuxer to add subtitles to the mpg files {assuming that you are creating or capturing to mpg or avi-mpg-vob} and then converting to vob's ?
haven't tried Maestro...
