What does this achieve by cropping better compression & more space available for video? since the black borders dont get used in encode?? or just to center the screen so to say?

You do not read the tuto correctly : the original border are removed to obtain more precises calc from fitCD, but new ones are added (there is a "AddBorder" line into the generated script).
So there are borders in the encode.

The goal of this is calculating the best crop/resize values with the lower error on the A/R possible.
