Try using virtualdub, it can do a direct stream copy. Using Avermedia to convert to mpeg uses compression for audio and video, where the compression may not be meant for a raw analog signal

Thanks, that was probably the only button I didn't press. It was on automatic, turning it off made the picture much better.
