I've finally got my workflow running and am able to capture video using VirtualDub. I attempted to follow the VirtualDub setup as prescribed here, though there were a few options that are grayed out for me. Namely:
Video-->Format
Video-->Source
When I go to Video-->Compression, I simply see '(No recompression: YUY2)', so hoping that is okay.

I tried installing huffyuv using the install guide specifically for Windows 7 64bit, but didn't seem to work (I was in the cmd prompt as admin).

Anyway, as I'm just getting started, my first capture samples don't look great. The biggest thing I notice is the interlacing. I've googled some things about deinterlacing and found suggestions for using software like Handbrake or Topaz Video AI to deinterlace the video.

My question: Can deinterlacing be done during the capture using a setting in VirtualDub...or is it expected that these types of "fixes" would be done after the capture using another software?

Ultimately my main concern right now is that I have the ideal settings in VirtualDub before I spend many hours capturing videos.

You need to install Huffyuv, use the hofmand installer.

I need to see screencaps of "grayed out" items.

Interlacing is how video is stored on videotape. You do not deinterlace during capture. In fact, it's best to not deinterlace at all, unless forced to by the platform (such as Youtube). But even then, just a copy, not the archival master file.

Topaz is mostly crapware, and handles interlace very poorly.
Handbrake is bugware, and makes lots of mistakes by insisting it knows better than you (especially aspect ratios), and has lower quality old-style deinterlacing.

What you need/want is QTGMC post-capture.

I tried getting the download from Github, but it's unclear to me what exactly I'm supposed to download. I did download both the "Prebuild" files the ReadMe says need to be unzipped with 7-zip, but 7-zip wasn't able to open them ("cannot open as archive").

I'm also including a screenshot with the grayed out options in VirtualDub.

Github is a confusing maze. I'm not a fan.

I've attached it for you here.

It's an MSI file (Microsoft installer) inside of the attached ZIP.

I added some installation instructions at the Github page.

goofy11, when HuffYUV is installed correctly, it will show up under Video > Compression.

Can you clarify step 3? I currently have the file downloaded to my desktop. I've opened the cmd prompt window in administrator mode and it says: C:\Windows\system32

What do I do from here?

I added more instructions. Since you downloaded the file to your desktop, you would type into the command prompt something like:

cd C:\Users\goofy11\Desktop
HuffYUV_x86_v2_1_1.msi

Okay, I successfully got HuffYUV installed.

Now just wondering about the grayed out menu options I noted above under the Video menu. Not sure if I should be concerned about those or if I should proceed with my captures? As far as I can tell, the VirtualDub software seems to be configured with the recommended settings I've found here, with the exception of a few settings that are currently inaccessible to verify.

Those same two menu options are grayed out in the VirtualDub Settings Guide.

I think whether those options are available depends on the capture card.
